The hazards of kitchen fumes
The catering industry will produce a large amount of oil smoke exhaust gas when cooking and processing food, which will cause great harm to the human body.
The composition of oil fumes is extremely complex, different kinds of edible oil at high temperature pyrolysis products as many as 20 kinds, mainly aldehydes, ketones, hydrocarbons, fatty acids, aromatic compounds and heterocyclic compounds, etc.. Different foods at high temperatures will produce different types of volatile substances, as many as hundreds.
The particulate matter (TSP) emitted by the catering industry is mainly PM2.5, accounting for about 76.91% of particulate matter. Food and beverage fumes are one of the direct sources of PM2.5 emissions, and soot pollutants aggravate the impact of haze. Kitchen fumes can harm people’s sensory organs and contain carcinogenic substances.
The scope of application of electrostatic precipitator
ESP electrostatic precipitators are suitable for almost all commercial restaurants.
In countries such as China, the United States and the United Kingdom, electrostatic precipitators are a necessity to open a commercial restaurant to reduce the environmental impact of kitchen fumes.
Electrostatic precipitators are commonly used in restaurants near residential buildings, factory staff restaurants, Japanese restaurants, Korean restaurants, Chinese restaurants, airport restaurants, restaurants in railway station waiting halls, restaurants in high-end shopping malls, etc.

Working principle of electrostatic precipitator
Through Coulomb’s law, it is known that in order to make a small particle (oil particle) have a Coulomb force, the oil particle needs to be polarized or charged; An electric field is established so that the charged oil particles are driven to the plates under the action of the Coulomb force (electric field force) to achieve the purpose of collection.
After the oil fume is sucked into the electrostatic precipitator air purifier by the fan, the front filter intercepts some of the larger oil particles. When the air flow enters the high-voltage electrostatic field (cell), the particles of the oil smoke gas are ionized by the high voltage under the action of the high-voltage electric field.
A small number of tiny oil particles move towards the positive and negative plates of the electric field (cell) under the action of the electric field force and air flow of the adsorption electric field (cell) . The tiny particles are collected on low-pressure plates and flow to the oil collection pan by their own gravity. The remaining micron-sized oil mist is degraded by an electric field (cell) into carbon dioxide and water. The pipes eventually exhaust clean air;
At the same time, under the action of the high-voltage generator, the air in the electric field (cell) produces ozone, which removes most of the odor in the flue gas.

Excellent purifying effect
The purification efficiency (DOP) of Fxair ESP electrostatic precipitators is divided into 3 types: 98%, 85% and 70%.
Consumers can choose the appropriate purification efficiency (DOP) according to the requirements of the local government and surrounding residents.
For areas requiring the emission concentration of oil fumes to be less than 1 mg/cubic meter, we recommend choosing a model with a purification efficiency (DOP) of 98%;
For areas requiring the emission concentration of oil fumes to be less than 2 mg/cubic meter, we recommend choosing a model with a purification efficiency (DOP) of 85%;
For areas far from the city and on high-rises, it is recommended to choose a model with a purification efficiency (DOP) of 70%.
Advantages of plate cell
Smaller size with the same purification efficiency
The plate of the Fxair high-voltage electric field (cell) is composed of 2mm aluminum alloy and 304 stainless steel, and the pole plate of the low-voltage electric field is made of 0.8mm aluminum alloy. The distance between the plates is 7mm, higher density and purification efficiency (DOP).
The honeycomb electric field (cell) has only a high-voltage area, and the material is galvanized sheet of 0.3mm. Although the purification efficiency is high, the oil pollution collection area is only half of that of the plate electric field, and the equipment is larger and difficult to install.
Longer cleaning cycle time of plate cell
After the plate electric field (cell) is assembled, the plate is perpendicular to the ground, and the collected oil automatically flows to the sewage outlet at the bottom of the equipment due to inertia. The plate electric field (cell) has a longer cleaning cycle and simpler and more convenient maintenance.
After the honeycomb electric field (cell) is assembled, the cylinder is parallel to the ground, and part of the collected oil will accumulate to the lowest point of the cylinder, which is more likely to cause discharge after long-term operation. Shorter cleaning cycles and more complex maintenance.
Easier cleaning of plate cell
After the plate electric field (cell) is soaked, it only needs to be rinsed with a high-pressure water gun and dried before it can be resumed to use. After the honeycomb electric field (cell) is immersed, each cylinder needs to be cleaned, and careful work is required to avoid damaging the electrodes of the cylinder.
